 400 g flour
 4 whole eggs
 200 g of minced meat
 1 truffle (you decide which one)
 200 g of smoked provola cheese
 100 g of milk
 Beef brown stock, garlic, parsley, herbs, salt and pepper.

Season the minced meat with salt, pepper, garlic and finely chopped parsley. Prepare the fresh pasta by mixing the flour and eggs, roll it out finely, cup it to the desired size, then fill it with the filling to form the tortelli. Melt the provola cheese in the milk to create the fondue. Cook the tortelli in lightly salted water then serve with the provola sauce, the brown fondue and plenty of truffle shavings. Garnish with aromatic herbs.
